Excellent as a gelatinous thickener used in Marbling. Agar is a dry, hydrophilic, colloidal substance extracted from certain marine algae of the class Rhodophyceae. It is a polysaccharide, which basically consists of -D and L-galactose units. On top of all tenth D-galactopyranose units contain a sulfate ester group.
